விளக்கமாகக் கூறுவதாயின் மதுவம் அல்லது நுரைமம் (yeast) என்னும் உயிரினத்தால் காபோவைதரேட்டு ஆல்ககோலாக மாறுவதும், சில பாக்டீரியாக்கள் சில உணவு வகைகளில் தொழிற்பட்டு இலக்டிக் அமிலம் உருவாவதும் நொதித்தல் என்னும் செயல்முறையாலாகும்.
