இறந்த தாவரங்களில் தமக்கான ஆற்றலைப் பெறும் பூஞ்சைகள் சாறுண்ணிகள் (Saprophytes) எனப்படும்.

இறந்த உயிர்களைச் சிதைத்து, சாறுண்ணும் வாழ்க்கை முறையைக் கொண்டுள்ள சாறுண்ணிகள் ஒருவகையாகும்.

இவை தாவரச் சாறுண்ணிகள் ஆகும்.

அதனால் காளான் ஒட்டுண்ணியாகவும் சாறுண்ணியாகவும் உள்ளது.

இது தாவரங்களின்  ஹோலோபைடிக் உணவூட்ட  முறையிலிருந்து வேறுபடுகிறது, இதில் ஆற்றல் மற்றும் கரிம கட்டுமானத் தொகுதிகள் ஒளிச்சேர்க்கை அல்லது வேதிச்சேர்க்கை மூலம் பெறப்படுகின்றன, மேலும் சாறுண்ணி வகை உணவூட்டத்தில், செரிமான நொதிகள் வெளிப்புறமாக வெளியிடப்படுவதால் உருவாகும் மோனோமெர்ஸ் (சிறிய கரிம மூலக்கூறுகள்) சூழலில் இருந்து நேரடியாக உறிஞ்சப்படுகின்றன.

இவை சாறுண்ணி, மலமுண்ணல், அல்லது தோட்டி விலங்குகளாக உள்ளன.

இந்த சாறுண்ணிகள் ஏதேனும் ஒரு வகையில் உயிருடன் இருக்கும் உடலுக்குள் சென்றுவிட்டால், அது முதலில் குடலிலும், பிறகு பல்வேறு முக்கிய உடல் உறுப்புகளான மண்ணீரல், ஈரல், தசை, மூளை போன்ற பகுதிகளுக்குச் சென்று, அங்குள்ள உயிரணுக்களைச் சிதைத்து வாழும்.

மேலும், சிறுநீர், சாணம் போன்றவற்றைச் சிதைக்கும் சாறுண்ணிகள் நைட்ரசனை உருவாக்கும் இயல்பைப் பெற்று இருக்கின்றன.
