इसी तरह छेना भी एक विशेष प्रकार का भारतीय चीज़ है जो पनीर से मिलता-जुलता है और रसगुल्ला बनाने में प्रयुक्त होता है।

लेकिन यह ज्ञात है कि 19 वीं शताब्दी के उत्तरार्ध में, सन्देश को सामान्यतः छेना-आधारित मिठाई कहा जाता था।



इस क्रिया में छेना (केसीन) दूध के जल वाले भाग से अलग हो जाता है।

यह व्यंजन आधुनिक छेना-आधारित सन्देश से कुछ अलग थी, जो की ठोस खोया से बनी थी।

साथ ही यहां का दहीबाड़ा भी काफी प्रसिद्व है जोकि इमली की चटनी के साथ परोसा जाता है।
