दूध में जल, घी में वनस्पति घी अथवा चर्बी, महँगे और श्रेष्ठतर अन्नों में सस्ते और घटिया अन्नों आदि के मिश्रण को साधारणत: मिलावट या अपमिश्रण कहते हैं।
